Welcome to September friends! This month has so much change and busyness so I hope things are going well and everyone is adjusting. I honestly had forgotten how busy this month is every year. There are all the minor changes you don’t think about, all the extra chores that come along with back-to-school. There are the extra laundry, the packing backpacks and the dreaded lunch prep that seems to always be left to last-minute and produces that fridge leftovers lunchbox! I am have been guilty of the panic mode lunch packing but this year I am determined to learn different recipes that I can prep beforehand so I have a great lunch to send with the kiddos daily! Being organized is such a huge time saver and I am putting together a lunch box meal plan soon so stay tuned for that! I did want to share this awesome life hack recipe with you guys today so keep scrolling!

One major time-saving hack is to prepare their lunches at the same time you're making dinner! I know a few kiddos don’t love eating leftovers so here is a great way to keep them excited about what they’re eating and save you time and ingredients!

What kid doesn’t love pizza? This amazing recipe uses Mastro/San Daniele cooked deli meats and is delicious day after day, keeping your family fed and satisfied while using quality ingredients. We love having homemade pizza for dinners and while making the pizza you set aside dough and make little pizza buns for lunches the next day - win-win!

The deli meat you choose can make or break your pizza. I had some bad experiences until I tried the Mastro/San Daniele Cooked deli meats I picked up at our local grocery store. Here is why I love these three different options:

Mastro Prosciutto Cotto - This Italian style ham has an amazing flavour that adds to any recipe or sandwich while also being extra lean and low in fat. It's also gluten and dairy-free!

San Daniele Mortadella - This Mortadella is gently prepared with a beautiful aroma. They cook it to savoury perfection and it is also gluten-free!

Mastro Capocollo - This meat is slow-cooked and has a distinctive flavour. It is a great choice for antipasto, sandwiches and our fave...pizza! Also gluten-free!

Here is a list of all of the general ingredients you need:

  • Flour

  • Yeast

  • Water

  • Sugar

  • Extra virgin olive oil

  • Salt

  • Pizza sauce of your choosing

  • Mozzarella cheese

  • Fresh basil

  • Grape tomatoes

  • Mastro/San Daniele Cooked Deli Meats:

    • Mastro Prosciutto Cotto

    • Mastro Capocollo (Mild and Hot)

    • San Daniele Mortadella (Classica, Light and Hot)

Pizza Dough

Ingredients:

  • 2 1/2 cups all purpose flour + extra for sprinkling on the counter

  • 1 tsp salt

  • 2 tsp active dry yeast

  • 1 tsp sugar

  • 1 cup of hot water

  • 3 tbsp extra virgin olive oil

Directions:

  • Preheat the oven to 500 degrees

  • Mix the yeast and sugar together in a large bowl or mixer (using the dough hook attachment) with the hot water and mix. Let this sit for 2-3 minutes until the yeast foams

  • Add olive oil and salt and mix

  • Mix in 2 cups of all purpose flour and assess your dough. If it is too sticky to roll out add extra flour or if its too dry add a splash of water

  • Leave the dough to rise for 10 minutes or longer to add more flavour

  • Flour a large surface on your counter and roll out until desired thickness is achieved, I would go with 1/4” for a fairly thin crust

  • Add your favourite toppings + bake in the oven at 500 degrees for 10-15 minutes. The thickness of your crust will determine how long it bakes for so make sure you check it at 10 minutes and add more time if needed

We absolutely loved the Capocollo and Mortadella layered around the pizza and chopped up the Prosciutto into small pieces and sprinkled it around the pizza to get a bit crispy in the oven and add a delicious crunch to every bite! We added fresh basil in the last 2 minutes in the oven to allow it to bake but also not get dried and shrivelled. We also added larger pieces of mozzarella in areas of the pizza which gave it a delicious texture and added some extra love to the already perfect pizza. The grape tomatoes bake so perfectly in the oven and are a heavenly explosion in the mouth!

The pizza dough is amazing and only takes 15 minutes to make! I have become very picky with my pizza over the years and ever since making this recipe we hardly ever order out anymore. Why? Because we find homemade is better and not hard to make! I will add this - you can put whatever you want on the pizza and inside the pizza buns, you can add a bit of pineapple(queue the haters) or my less kid-friendly favourite, jalapeños! The deli meat makes all of the difference and the flavours come out beautifully and taste so fresh and flavourful!
