Pad Thai Recipe
Everyone gets into routine ruts whether it be with workouts, day to day - you name it! Dinner recipes are an easy one to get bored of or just feel like you want something new. We felt the same way so hubby came up with this brilliant idea - THEME WEEKS! This past week we’ve had some of the most delicious recipes ever made in this home and we are so over the moon about every single one!
This one I’m writing about today is our take on a Pad Thai recipe that we found here. Neither hubby nor I come from Asian backgrounds or had much exposure to Asian food growing up but it is one of our favourites to eat and now some of our favourites to create! We do love our food on the spicier side of things and we all know Thai food can get some real spice happening so walk cautiously through the recipe and only add what you desire. We’ve kept these recipes with as mild a level of spice as we know how to cook, so it should be fine depending on your tolerance level.

Ingredients
2 cloves garlic
1 Tbsp cilantro stems, chopped
12 leaves thai basil, chopped
1 green onion, chopped
1/4c peanuts, chopped
2 large carrots, julienned
1/2 red bell pepper, sliced thin
3 Tbsp sesame oil, divided
1 egg, beaten
1 lb skinless boneless chicken thighs, sliced thin
5 oz rice noodles
Sauce
2 Tbsp honey
1 Tbsp rice vinegar
1 Tbsp soy sauce
1 Tbsp chilli garlic paste
1 Tbsp fish sauce
1 Tbsp peanut butter
1 tsp minced ginger
Soak your rice noodles in hot water until soft then drain and set aside. Drizzle 1 tbsp of sesame oil over the noodles, toss and set aside.
Prep all of your fresh ingredients as shown in the list above and put them all on a plate.
Prep your chicken of choice and set it aside.
Crack one egg into a separate bowl and whisk.
Put all of the sauce ingredients into a mixing bowl and whisk until they are completely combined.
Add 1 tbsp sesame oil to a frying pan at medium high and cook the chicken until done starting to brown then remove to a different dish and set aside.
Add the final 1 tbsp of sesame oil to the hot pan and add your peppers, carrots and garlic until tender - 1 or 2 min.
Pour the egg into the centre of the pan and stir until eggs are scrambled.
Add the basil, cilantro, green onion and peanuts into the pan and stir together until all is mixed, cooking until the peanuts begin to soften.
Add the sauce, rice noodles and cooked chicken into the pan and mix. Reduce the heat to medium-low and cook until the noodles are tender.
Plate and top with any additional peanuts or toppings as desired and enjoy!
