Chicken Parmesan and Roasted Veggies

The dead of winter is here we're stuck inside. It's cold, the holidays are over and we are doing everything possible not to reach for our phones to order dinner. Sometimes we need lazy comfort meals and today I am here to bring it to you! Not only is this dinner delicious but I also feel like it fills the gap between comfort food and eating healthy! Sure there is a bit of breading on the chicken and a tiny slice of cheese (which you could leave out but you’d be crazy to) but overall I find this meal so satisfying and perfect for the cold months.

Many people love pairing chicken parm with good pasta on the side and I am right there with you, however, I do find potatoes sit so much better and are a much healthier option while also giving you that carb satisfaction! Roasted veggies are a Gammel family staple during the Fall and Winter months and we love roasting things like carrots, beets, potatoes and peppers. Pairing this meal with a side salad just takes it to a whole other healthy level so you can stick to your New Years' resolutions while enjoying all the deliciousness of eating comfort food! What could be better?

Ingredients

  • Chicken breast

  • Eggs

  • Italian seasoned breadcrumbs

  • Mozzarella cheese

  • Pasta sauce of choice(we went with a roasted red pepper!)

  • Veggies for roasting - potatoes, sweet potatoes, beets, carrots etc.

  • Olive oil

  • Salt

  • Pepper

Directions

  • Preheat the oven to 450F

  • Begin by cutting your chicken breasts in half lengthwise if they are quite thick or leave them thick to keep them moist while cooking. Crack eggs into bowl and scramble, place the breading mixture in a bowl and begin to coat the chicken breasts dredging in egg and breadcrumbs until completely covered.

  • Spread out the chicken on a baking sheet and put it inside the oven for about 15 minutes. Flip and put back in the oven for another 10 minutes or until the internal temperature reaches 165F.

  • Remove the chicken from the oven and cover with pasta sauce and a slice of cheese and put back into the oven for the remaining 5 minutes to melt the cheese.

Roasted Veg:

  • Slice up your desired vegetables into cubes of 1/2” thick. Coat with olive oil, salt and pepper and put them in the 450-degree oven for 15 minutes

  • Flip and put them back in for 15 more minutes or until browned

  • Season as desired and enjoy
