Sweet Summer Peach Galettes

We tried three different combinations - peach cinnamon, peach blueberry and peach with fresh basil and ginger and we loved them all! These are super easy to make and will add a sweet touch to any crisp summer night.
Crust
3 3/4 (470 grams) cups all-purpose flour
1 1/2 tablespoons sugar
1 1/2 teaspoons table salt
3 sticks (340 grams) unsalted butter, very cold
3/4 cup very cold water
Filling
3lbs local peaches
1/3c sugar
3tbsp cornstarch
Juice of 1 lime
Make crust - Whisk together dry ingredients in a large wide bowl. Chop butter into small pieces and work into flour mixture until biggest pieces of butter are the size of a small pea. Pour in water and gently stir until loose mass forms. Knead several times in bowl until a ball is formed. Separate the dough into 4 balls, wrap tightly with plastic wrap and refrigerate for at least an hour.
Make filling - Slice peaches thinly and then toss with other ingredients until coated. Assemble Galette - Roll out dough ball on floured surface until 1/8” thick in a rough circular shape. Brush egg white on the dough before adding the filling to prevent the dough getting soggy while baking. Add filling in center then fold up the edges around the filling. Bake for 40-45 minutes at 375 degrees. The crust should be golden and the filling bubbling.
